Parsley
Both curly and flat-leaf parsley varieties flourish on Hawaiʻi Island, with year-round harvesting possible under careful irrigation. Used in diverse cuisines, it finds markets in local restaurants and produce shelves.

Parsley grows well in moderate temperatures and can be extended with shade to avoid bolting in high heat. The herb is often grown alongside other culinary herbs, creating a convenient “herb hub” for direct market sales. Its versatile usage—as garnish, flavor base, or juicing ingredient—keeps demand consistent. Although not commanding extensive acreage, parsley’s consistent appeal in everything from plate lunches to gourmet kitchens ensures it remains a quiet but steady crop for many smaller-scale operations.
